Cabbage Kimchi Recipe

Yields 2 quarts

Ingredients

1 head cabbage, but

1 pound white radish, cut into half moons

5 cups water

2 TBS salt

2 TBS ginger, minced

1 clover garlic, minced

1 green onion, chopped

1/2 tsp cayenne

Instructions

In a large bowl, combine cabbage, radish, water, and salt

Allow mixture to sit for 12 hours

Remove cabbage and radish from liquid and mix with ginger, garlic, green onion, and cayenne

Put ingredients in a jar or crock pot and pour soaking liquid over vegetables so it is 1 inch from the top

Cover with a cloth and set aside for 3-7 days
